Nenox Blade & Handle

The Sakura series combines the best characteristics of Japanese and Western-style knives. Nenohi blades offer the durability and sharpness of a traditional Japanese carbon steel knife, but are rust resistant and easier to maintain. The knives in the Sakura series have double bevel blades and Japanese magnolia handles.

E-ume
In fusing the blade to the handle, the gap is filled using the same material as the handle. Furthermore, a waterproof wax material is added to prevent any chance of moisture entering through even a minuscule of spaces. E-Ume deters problems arising from the metals rusting inside the handle core due to moisture.

Nenox Gyuto

The gyuto is the Japanese version of the classic Western chef's knife but the blade is thinner and holds a sharper edge. Use it for chopping, mincing and slicing meat, fish, vegetables and fruit.

Caution

High carbon steel knives can still rust if not maintained properly. Use the Tsukiji Masamoto or Sabitohru Rust Remover to clean oxidized blades.

    I bought the 30cm and I'm amazed at how light it is. Much lighter than my Gtype Nenox. I cook professionally and with my hours, I don't really have time to spend my money on anything else so I didn't hesitate too much getting this gyuto. I love the handle of this knife too- there's soemthing about wooden handles that just feels much better than the other types of haneles about there!
