I recommend Haku to people who want their first Japanese knife but don’t know where to start. It is a great introduction to the quality of Western style knives made in Japan. It is engineered by Nenohi but we purchase directly from the factory, so we are able to offer these knives at a much lower price than other Japanese brands (up to 30% cheaper) available here. I wanted to collaborate with the president of Nenohi to produce something that is affordable but of high quality.
The high carbon component gives it the sharp edge and because it is formed from one piece of high carbon inox steel, it is the kind of knife that performs better and better as you sharpen it. You will probably be surprised at its long term performance.
It is a well-balanced knife that is easy to sharpen and I think it is a great steal.
