Bonito flakes, known as katsuobushi in Japanese cuisine, are made from dried, smoked and shaved fish. The flakes are a primary ingredient in Dashi, a Japanese stock, and you can sprinkle it on the top of foods like Okonomiyaki, Miso soup, Udon, etc..
Yamaki (established in 1917 in Japan) was the first company to produce Bonito flakes and powder in the U.S.. This Hon-Katsuo is made only with selected line-caught fish. As a result, the fish do not sustain damage and the highest quality can be ensured.
